Yummie Shakeology!

Nothing better than a frozen, vegan
strawberry orange banana Shakeology after a hot morning mowing the lawn!



Ingredients:
1 scoop strawberry vegan Shakeology
10 oz 100% pure orange juice
1 C ice
1 banana
3 frozen strawberries

Directions:
Blend until smooth. Put a fresh strawberry on the side to make it pretty and make you feel like you are on vacation. Then, sit down and ENJOY!

Never imagined!

When I started this blog my intention was to use it as a personal accountability tool. I only shared it with 3 people. I never imagined I would share it with the entire FB world, but today that is just what I did! YIKES!
Talk about vulnerability! Who wants to show hundreds of people a profile picture of yourself in a skin tight rash guard??? Um...not me! However, the results speak for themselves! I'm so glad I took those before and after pics! I wish I had taken measurements, though I just couldn't bring myself to measure my flub! There is a lot less of it now, so I just took some measurements so I can see how I can improve from here. My husband and I are currently starting the Les Mills Pump program from Beachbody, so I will be keeping track of my progress throughout the next 90 days!
The other thing I never imagined was that I would become a Beachbody coach...again! Yes, I did this once before, but really never told anyone (unless somehow it came up). I felt like I had no authority to talk to someone about losing weight, because I wasn't losing any! Now that I've had success, I feel amazing, and I KNOW these programs work...I can share it with confidence! Before, the main reason I became a coach was to get the discount on the Shakeology that my husband was taking! I will now be taking Shakeology myself as I have seen so many others have an enormous amount of success just by adding it into their daily routine! Before and After the Reset

Ugh Ugh Ugh...Can I tell you how much I hate posting pictures of myself! Well here it is...I still have a ways to go, but you can certainly see the amazing difference made in just 21 days! I sure hope this inspires someone!!! This change was a direct result of following Beachbody's Ultimate Reset to a "T"! No exercise, but lots of really yummy whole foods!!! I was never hungry. In fact, I most definitely ate more than I was before. The difference was it was better, healthier, real (ie. not processed) foods! Anyone is capable of achieving similar results...you just have to put your mind to it! The program lays everything out for you, including grocery lists, recipes and a complete meal plan for all 21 days! You can do this too!!!

The Hangover

There is no alcohol involved in this hangover. Nope! This is a food hangover! I wouldn't have believed it if you had told me this could happen. All I did was eat some of my previously favorite things. You see this week was my son's birthday and I made him an ice cream cake (with organic vanilla ice cream). I had some the night of his actual birthday and I instantly felt rotten after eating it, but I thought I just ate too much.Well, last night I decided to have a small sliver. But then, I also had a small cup of non fat cows milk. Sugar and dairy! That's it...no caffeine, no alcohol, no majorly processed foods, just some sugar and dairy! And can I tell you how physically rotten I feel this morning. It feels exactly like I had too much to drink last night! This has to be one of the strangest feelings! I used to go through a gallon of skim milk in 1 week, by myself! Maybe that was contributing to some of the sluggishness I used to feel? I used to suspect that I had some kind of issue with dairy, because if I had something with cream in it I used to get a yucky feeling. However, I never stopped drinking my milk. I thought it was probably just the high fat content of the cream and besides a girl needs her calcium, right? It's true, we need at least 1000mg of calcium each day. Did you know that according to several articles (including one on livestrong.com) 75% of Americans are deficient in calcium? Well, many of those are cheese eating, milk drinking folks! Anyhow, I can always take a calcium supplement, but there are a lot of non dairy options out there too. Here is a list of 25 non dairy sources of calcium. I can tell you that I won't be having any dairy for a long while (maybe ever) and I just don't think I can handle the sugar.
You know having that little bit of sugar just made me want more...well yesterday I wanted more...today, you couldn't force feed it to me! You know the funny thing is I thought I was doing good just having a sliver, like 1/4 of what I would have sliced myself pre-reset! My husband warned me...I should have listened!
No more dairy or white sugar for this girl!

Sugar-free Vegan Cookie

I found this awesome recipe from irocksowhat.com. I made it the first time for my daughter, who needs to take a healthy snack with her to swim team meets. This recipe is really versatile, because you can add lots of different things to make it your own! I didn't really change the recipe itself, but instead of using already prepared applesauce, I steamed my own apples and blended them in my blender. I feel better making it all from scratch. Especially when it only takes an extra 5 minutes to do it myself. Also, I thought of several variations that I am sharing with you.
Anyhow, my children, ages 5 and 7, absolutely loved these cookies and so did I!

Ingredients:
3 apples (chopped with skins on and steamed until soft, then blended in food processor or blender)
or 1 cup applesauce (or pumpkin puree)
2-3 very ripe bananas, mashed (not blended)
1 1/2 cup whole rolled oats (I use organic, from bulk section at Earth Fare or Whole Foods)
1-2 teaspoons cinnamon (or apple pie spice blend, pumpkin pie spice blend)

optional add ins, up to a total of 1/2 cup:
1/4 cup chopped dried fruit (cherries, craisins, raisins, blueberries...)
1/4 cup chopped nuts or seeds (pumpkin seeds, sunflower seeds, pecans, walnuts...)
1/4 cup chocolate chips (carob chips, cacao nibs...)
1/4 cup nut butter (peanut, almond...)

Directions:
Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper. Since there is no fat in these cookies, they will stick to any other surface.
Mix all ingredients thoroughly. Let mixture sit for 10 minutes. This will allow some of the moisture to enter the oats and the mixture will thicken up a bit. Then, spoon out 1 tablespoon sized mounds onto the parchment paper lined baking sheet. I like using a mini ice cream scoop, as the mixture is rather wet and this give the cookies some uniformity.
Finally, bake for about 35 mintues. ENJOY!

Day 21

WOW! I can't believe it! I successfully completed all 21 days of the Beachbody Ultimate Reset! I must tell you that this is the first time that I have EVER completed a program related to diet or exercise! I always start out strong and then fizzle out! This time was different!
I believe that anyone could do this! Beachbody makes it SO incredibly easy to stick to! Most people said to me, "I don't think I would have any idea where to begin". Well, the great thing is you don't have to know where to begin. Beachbody tells you what to do every step along the way! You get grocery lists, recipes, and a menu for every single meal that you are to eat on the program!
Will power seems to be my issue when it is up to me to decide what I am eating. With this program it wasn't up to me...I just did what the guide told me to do! If you read all of the information ahead of time and prepare yourself you will be successful! Now, I can't say that I never craved anything, but I can say that I wanted to succeed so bad that my cravings never really amounted to anything!
I am so excited to go on from here and continue my journey to completely regaining my health!
I'm down a solid 13 pounds, I didn't take measurements (though I should have) and like I've said before, my energy level is 10 times what it was before and I just feel great! I can't even explain it in words...I feel so different...so good! I'll be posting my before and after pics...ugh, but I know they will be helpful to someone and maybe even me (to remind me what I don't want to go back to)!
